Highland Wagyu

At Udale Speciality Foods we are proud to work with Highland Wagyu, a pedigree beef company, breeding premium Japanese Wagyu, Aberdeen Angus, Beef Shorthorn, Highland and Dexter cattle with a mission to produce the best beef in the world from their 25,000-acre estate farm in Perthshire, Scotland.

Established by husband and wife team Mohsin Altajir and Martine Chapman in 2011, their ethos of quality, respect and precision underpins everything they do.

It’s native breeds are free-range, traditionally reared cattle fed on a specially created GM-free “Blackford” blend. Highland Wagyu finish their cattle as naturally as possible and they are matured for 28 days. The luxury Wagyu beef is fed on a specially created “Highland Wagyu” blend for approximately 600 days after weaning to ensure consistently high marbling. Its fair to say the cattle are pampered throughout their life cycle and they breed and cross with only 100% pedigree animals.

The care and attention that goes into the welfare and farming of all their animals during their lives gives chefs the confidence that this gourmet beef is of the highest quality and the finest flavour.
